This is for Rosa Thompson and littlemisssunshinexxx because they wanted me to do some Christmas Recipes! Thanks for the idea! I will be telling you how to make my favourite Chocolate Chip Cookie recipe (Nina, these are your mum's chocolate chip cookies!)and a really good Peanut Butter Fudge. I will be rating these from 1 to 5. 1 is easy and 5 is hard. I rate the Chocolate Chip Cookies 2 because they are quite easy and I have been making them for years. I rate the Peanut Butter Fudge 4 or 5 because the can come out really gooey sometimes!
Chocolate Chip Cookies (makes 48)
Ingredients
225g butter, room temp
95g sugar
160g brown sugar
2 large eggs
1 tsp vanilla
480g flour
2 tsp baking soda
1 1/4 tsp baking powder
1/2 tsp salt
250g semisweet chocolate chips
1. Preheat oven to 350 degrees Fahrenheit, 180 degrees Celsius or gas mark 4. Line two large baking sheets with parchment paper.
2. In a large bowl cream the butter. Add the sugars and beat until well combined. Beat in one egg and the vanilla. Add the remaining egg and beat until just combined.
3. In a separate bowl combine the flour, baking soda, baking powder and salt. Add the dry ingredients to the creamed mixture and mix gently until incorporated. Add the chocolate chips and combine.
4. Using two tablespoons, drop about 2 teaspoons on baking sheets. Don't flatten the cookies. Bake for 12-14 mins or until golden brown.
Peanut Butter Fudge! (perfect for a gift!)
Makes 16-20 pieces
Ingredients
379g tin condensed milk
150ml double cream
450g caster sugar
115g unsalted butter
2 tbsp smooth peanut butter
1 tsp sea salt
1. Line a 20x 20cm baking tin with parchment paper. Put all the ingredients apart from the salt in the pan, bring to the boil. Then reduce the heat and simmer for 10-15 mins, stirring the whole time.
2. Drop a bit of mixture into iced water and see if it produces a soft ball.
3. Remove the pan from the heat and beat for 3-4 mins until thick. Pour into the lined baking tin. Sprinkle with salt, cut and serve.
